Spinach & Mushroom Chicken




This recipe is sure to impress, and isn't too hard. It tastes amazing. But then again, anything with cream cheese does. It has mushrooms in it, which I'm a sucker for, and WINE! I love cooking with wine because the cork is usually demolished when trying to open it and well, cant let it go to waste so i guess ill just drink it all! he he he...enjoy...



You will need:

1 bag spinach leafs
4oz cream cheese
1/4 C shredded parmesan cheese
4 cloves minced garlic, halfed
4 T olive oil, halfed
Salt and pepper to taste
8 oz fresh sliced mushroom
1/2 stick butter
1/2 C white wine (yayyyy!)
4-5 boneless chicken breasts
4 C Mozzarella cheese
1 T garlic powder
1 T seasoned salt
1 teaspoon pepper

Preheat the oven to 350 degrees.  Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken.  Bake for 16 minutes.


While that cooks, melt 2 T olive oil in a skillet Over medium-high heat.   Add in the spinach and garlic.  Don't fret if it shrinks, it's supposed to!  When it's cooked through, stir in the cream cheese and Parmesan cheese.  Continue cooking and stirring until the cream cheese is melted.  Remove from heat.





Next, melt butter and 2 T olive oil in a skillet on medium heat.  Add  mushrooms and cook until browned. Add wine, garlic and season with salt and pepper.  Cook about 10 minutes





Back in the oven, flip the chicken pieces. Smother the spinach mix over the chicken, and top with mushrooms.  Sprinkle in the Mozzarella cheese.  Cook another 12-14 minutes or until cheese is browned and chicken is done.

My latest DIY

Ok everyone, I have to share with you my latest invention. I'm pretty proud of it. I use my tablet for most of my recipes and it gets dirty on the counter so i made a CASE FOR IT that i can HANG FROM THE CABINET! Basically it's just a cloth case and i put a little flap in the back with velcro on it for it to hang from. The other piece of velcro is under the lip of the cabinet (out of sight) where it will be secured permanantly. So i just basically stick this behind the lip of the cabinet that hangs down............................Well...i thought it was cool anyway...even better though...just another lil effective invention for me in the kitchen!

**EASY** Sliders for dinner!








Mix desired amount of hamburger meat, onions and breadcrumbs and flatten out onto cookie sheet

cook at 400 for 10-15 minutes

serve on Kings Hawaiian rolls!

add cheese and other toppings
