Mississippi Mud Fudge

Pat yourself on the back for visiting this post, because I HAVE to tell you, this is the BEST piece of food I have ever, EVER made. Hands down, this is my FAVORITE. I am so exciting to share it with you because OMG...Just, WOW. My husband always tells me that I'm too hard on myself when it comes to the foods I made and critiquing them...but this...just, WOW. Try it, it is SO WORTH IT. Please let me know if you liked it as much as me...because...I don't know what to say other than WOW!

Makes 15 servings - Prep: 15 min - Bake: 40 min

You will need (fudge):
1 cup chopped pecans (more if you're a pecan lover like myself)
1 cup butter
1 4oz semisweet chocolate baking bar, chopped (put it in a ziploc bag, wrap a hand towel around it, and take a hammer to it on the ground )
2 cups sugar
1.5 cup all-purpose flour
1/2 cup unsweetened cocoa
4 large eggs
1 tsp vanilla
3/4 tsp salt
1 bag mini marshmallows (10.5oz)
Chocolate frosting

You will need (frosting):
1/2 cup butter
1/3 cup unsweetened cocoa
1/3 cup milk
1 pack powdered sugar (16oz)
1 tsp vanilla

Directions:
1. Place pecans on cookie sheet and bake at 350° 8-10 mins, leave oven running when complete
2. Microwave 1 cup butter + semisweet chocolate bar in microwave for 1 minute, stirring every 30 seconds
3. Mix sugar, flour, cocoa, eggs, vanilla and salt and chocolate mixture together until smooth
4. Pour into greased 15x10x1 pan
5. Bake at 350° for 20 minutes, if it seems watery and "jiggles", leave in a big longer
6. Remove from oven, layer marshmallows evenly over top
7. Bake 10-15 minutes until marshmallows are golden brown
8. drizzle with frosting and add pecans
9. Come back and tell me if you went cross eyed when you tasted it (like i did!)

  1. My favorite part of your post: "You will need (fudge)"
Why yes I will. I will need lots of fudge. I imagined it as a Jedi mind trick. These are not the droids you seek. Anyway, looking forward to taking the recipe out for a taste test. mmmm fudge.

    1. LOL its more of a "For the Fudge, you will need" -- if you look farther it says you will need (frosting) ...no mind tricks here LOLOLOL I want to make more of this really bad, but considering how fast we inhaled, i mean ate the first batch, that is probably not a good idea!
